Carrot farms are a little better (5-10%). But for carrots you have to craft much more which is annoying tbh. So I would recommend potatoes if you just want an easy way of crafting and selling.

They give like twice as much money as cane and are slightly easier to build.

Potatos take no crafting if you have a PC5k+, but I think Carrot Candies have to be manually crafted(plus you'd need a bunch of e-golden carrots on you)

i have experience with carrots and you have to sit at bazaar and buy gold turn them into nuggs and craft them stack by stack and its really annoying

You still need to manually craft hpb which gives you like 2-3% more coins when selling for almost no additional cost. If you are fine with just selling hot potatoes than you are absolutely correct.
For carrots the crafting of the golden carrots is the most annoying part. It takes forever. Your inventory is full with gold nuggets and it really reminds you of times when you were buying items from the npc for hours to upgrade minions xD

How exactly do you farm? Do you farm at high speed 1 row at a time, if so what speed? Or do you fly sideways to break multiple crops at once?

I farm cane at 248 speed on an angle so I break 2 cane at once, as for potatoes I farm them at 354 speed the way technoblade farm them. My cane farm is 3 layers and my potato farm is 5 layers. You can visit me to see exactly how I built them.
